Upside down orange cake

My husband's and my family is visiting from India. So there is a lot of simple and traditional Indian cooking happening in my home. However, my mother takes care of most of the day to day meals :) ...which gives me time to experiment and cook my favorite part of the cooking --- desserts...:) I  baked almost 3 cakes for them, in a week they were here. This cake, I made for my father's birthday last week. It is an unusual and refreshing one from the usual chocolate and vanilla flavors which my kids like. I adapted this recipe with the ingredients, I had with me.

Chocolate Chiffon Cake

Spongy, light and airy ! Beautiful base to do nice frosting ...!!  I make this cake, when I need a dessert to feed many people. It is a beautiful center-piece and show stopping  dessert for any party or special occasion. This time, I made this cake for my kid's birthday party. All the kids, enjoyed it ... and the kids were very surprised to know that it was a homemade cake. I found this recipe, about an year back here. I have made this cake 4 times, with perfect results. I have omitted the coffee in the recipe, as we like the pure chocolate flavor.

Summery cool and fun recipes with watermelon and kids

Yep, it's summer season in India and it will be soon in rest of the world. Singapore has tropical summer kind of weather all throughout the year, so we can enjoy this season and all the activities associated like swimming, water parks, hiking, adventure sports, etc anytime. Summer has 2-3 month long vacations too. So,  how do you keep your kids busy....?? I have some easy fun recipes that you can do with your kids. (With your supervision/help). So starting a new category of recipes, which the kids might like, or which you can cook with them.

Meghas Chocolate Cake

 Megha's Chocolate Cake... :) what an odd  name for a cake....but i always refer to the cake made by this recipe, as megha's chocolate cake instead of just a chocolate cake. This was the first cake, I learnt to bake without burning. As it is named, it was taught to me by my friend Megha who learnt it from some Japanese cook book from the library. It is not very difficult, if it is followed exactly. I had a "written recipe", which was missing  and luckily which I found in one of my old suitcases. I was so happy to get it and it makes a perfect "1st dessert recipe post".   Let me begin this post with a picture of the cake, which I clicked just before my kids attacked it. They were patient for 10-15 minutes, while I plated it..and clicked a few pics...!! It's light, fluffy and rich.
