Green Mango Salad

Thai food is my most favorite next to Indian. However, I do not know how to cook it well.  Learning about it slowly. Singapore is a good place to learn how to make good thai food, as you get all the ingredients fresh and cheap. Green mango salad(or green papaya salad) is a very refreshing and unique flavored recipe. 


Ingredients:

  • 2 green mangoes
  • a bunch of spring onions
  • a bunch of coriander
  • 2 red chilies
  • handful of peanuts (about 1/2 cup)
  • 3 tbsp fish sauce
  • 1/2 tsp soy sauce
  • juice of half a lemon
  • 1-2 tsp brown sugar(i used white)
  • lemon wedges/lettuce leaves/peanuts/coriander leaves/red chili for garnish

Recipe:

  • Peel the mangoes. Remove the stone and chop the mango to fine matchsticks. (You can grate the mangoes on a mandolin or in a food processor)
  • Add chopped spring onions and chopped chilly. (I removed the seeds as I find the thai red chilies too spicy.)

  •  Crush the peanuts and add them to the salad.



  • Now make the dressing. Mix 3 tbsps fish sauce/soy sauce/sugar and stir the mix till sugar is dissolved. Add juice of lemon. Taste the dressing and add sugar if needed. Add the lemon juice slowly... so as to get the right amount of tartness to the dressing. Also, add one chopped red chili  (I din't as I din't want the salad to be very spicy)
  • Pour the dressing over the salad and toss the salad well. 
  • Serve it on a platter with a garnish of coriander leaves and more peanuts and lemon wedges. (You can serve the salad on a lettuce leaf, to make it more attractive)

Quantity:

  • 3-4 servings (However, I ate half of it.....as dinner today :) ) 

Notes:

  • You can use green papaya instead of green mango.
  • You can use soy sauce all the way, instead of fish sauce(to make it vegetarian)... however, make the dressing by adding the soy and lemon 1 tbsp at a time and check the taste.
  • You can use cashew-nuts instead of peanuts or both.
  • You can increase the chilies to make it spicy.
  • You can add some bean sprouts, some tomatoes or colored bell-peppers too.
  • You can add some toasted baking dry coconut flakes too.
