I am writing this post for a friend who rarely makes eggs and wanted to know how to make a simple omelette with loads of veges. That is my usual meal when I do not wish to spend a lot of time in cooking yet have something filling and healthy. I have used spinach, onions and capsicum today but you can use any vegetables of your choice like grated carrots, corn, potatoes, celery or other leafy vegetables of your choice. I usually serve the omelette as it is...or sandwiched between toasted slices of multi-grain or whole wheat bread.
Ingredients:
- 4 eggs
- 1/2 onion chopped
- 1/2 capsicum chopped
- 1/2 cup chopped spinach
- salt and pepper
- 1/4 cup grated cheese of your choice. I used 2 slices of Emmental cheese and chopped them
- 1 tsp oil
Recipe:
- Chop the vegetables and put them in a bowl.
- Break 4 eggs on top of veges and whisk them with a fork or a egg whisk.
- Add salt and pepper( about 1/2 tsp each) and add cheese and whisk again.
- Grease a small pan(I used about 8 and 1/2 inch pan ) with half a tsp oil and pour half of the batter in the pan. Keep the heat high and with a fork bring the sides of the omelette inside....swirl the veges around with the fork and see that they settle evenly around the whole of the omelette.
- Now, reduce the heat to low and cover the pan to let the omelette cook on one side. It will take about 4-6 mins. Keep the heat low and do not be tempted to increase the heat, otherwise the omelette with burn.
- Once you see that the omelette is beginning to set and getting firm....put a spatula underneath it and gently flip it.
- Cook it uncovered till it is done.
- You can cut it into 4 pieces as shown in the pic and serve it hot with more cheese and toast.
Quantity:
- You can use any other vegetables of your choice.
- You can add a green chili or chili flakes for some heat.
- You can add more grated cheese on top of the omelette while serving or omit cheese all-together.
