Baked yeasted doughnuts

We knead to bake #6 June 2013. Half a year is already gone.....and this is the 6th bread, I learnt to bake with success. It was a fool proof and easy recipe. The doughnut glaze was a bit difficult for me, I need to try it again. I made it in a hurry, and dipped and clicked pictures, as I had to take my little one out for his summer holiday activity. The doughnuts were nice and soft. I left the "holes" un-glazed and just dabbed them with melted butter and they tasted lovely just like that. 6 months back, I wouldn't have even dreamt about making a doughnut at home... :)  They were so soft and perfect....!!!






Ingredients:

  • 1/4 cup superfine sugar
  • 1 cup warm milk
  • 3/4 tsp instant yeast
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 and 1/2 to 2 and 1/2 cup all purpose flour
  • 1 cup of cake flour
  • 100 gm butter
  • more flour for kneading
  • for the topping: Glaze of your choice. I have used cinnamon sugar glaze and lindt chocolate glaze (Recipe follows)



Recipe(Lara Feroni's dougnuts):

  • I used a food processor to make the doughnut dough, but it can be made with a hand whisk with a dough hook attachment or by kneading with hand.
  • Put the milk, vanilla, sugar, salt and yeast in the food processor bowl and pulse till everything is well mixed.

  • Add a cup of cake flour and all purpose flour, and pulse the processor to get a sticky dough.
  • Now keep adding more flour and pulse, till all the flour forms a dough.

  • Now, add butter and mix till the butter in well incorporated in the dough. You can add more flour to get a soft, non-sticky dough.

  • I used 1 cup of cake flour and about a little less than 3 cups of all purpose flour.
  • Take the dough out of the food processor, and knead it for 2-3 minutes by hand.
  • Put it in a well greased bowl to rise.Cover with a plastic wrap.

  • It will double in about an hour or two.

  • Punch the dough down. Divide the dough in 2 or 3 portions and keep them covered.
  • Roll out one of the portions to 1/2 inch thick. 

  • Cut out the doughnuts with a doughnut cutter ..or anything else like maybe 2 lids. 

  • Carefully, lift out the doughnuts and put them on a baking sheet about 1 inch apart.

  • Let them rise again for about 20 minutes.

  • Bake in a preheated oven at 200 degrees for 5 to 10 minutes.

  • Brush them with melted butter, as soon as they are taken out of the oven. 

  • Glaze them as you wish.



Recipe for melted chocolate:

  • I used lindt bar. Used about 4 squares of chocolate. Keep them in microwave safe bowl and microwave for 40 secs to 1 minute or more..checking every 20 seconds.
  • You can also melt the chocolate in a double boiler.



Recipe for cinnamon sugar glaze:

  • I added 1 tsp of cinnamon powder to 1/4 cup of sugar. Added about 3-4 tsp of water till all the sugar was soaked.
  • Boil the sugar and water, till the sugar is melted. I was in a hurry, so my sugar didn't melt well.



Quantity:

  • 24 mini doughnuts and holes

Notes:

  • This is yet another recipe which I tried for the first time and got perfect results. The doughnuts were very soft and yummy. Thank you, +Aparna Balasubramanian  one more time :) !!!
