My son wanted to eat chicken and I wanted to try a new recipe, so after searching different recipes through internet, I settled for Lemon flavored chicken recipe. I didn't really follow any particular recipe, just added things along with the chicken that were in my pantry.I just wanted the recipe to be healthy and "no-deep-fry". The result was refreshing and tasty.
Ingredients:
- 400 gms chicken (I used 2 chicken breast pieces)
- zest of 1 large lemon
- juice of 1/2 lemon
- 2 garlic cloves grated
- salt, pepper about 1/2-1 tsp
- red chili flakes 1 tsp
- dried mixed herbs 1 tsp
- 1 tsp oil
- flour/corn tortillas
- 1/2 cup each of chopped vegetables like carrots, capsicum, onion, etc
- 1/2 cup of grated cheese (I used mozzarella and parmesan)
Recipe:
- Chop the chicken breasts to 1 cm wide fillets.
- Add lemon zest to the chicken.
- Add lemon juice to the chicken.
- Add garlic, salt, pepper, chili flakes and mixed herbs and mix well.
- Keep the chicken in the marinade for about 30 minutes to 2 hours.
- Grease a baking tray with oil. Line the marinated chicken in the pan in one layer.
- Drizzle the leftover marinade on top of the chicken. Sprinkle about 2 tbsp of cheese on top of the chicken.
- Bake uncovered in a preheated oven for about 20-25 minutes till the chicken turns white and breaks off easily.
- Serve garnished with lemon wedges.
- I served them in garlic wraps with other vegetables like onions, carrots and capsicum.
