Ginger tofu stir-fry

I love stir-fries. One of the quickest kind of meals. You can make it, as healthy as you want. It has no restrictions about the kind of vegetables or meat you can use. If you do not have one kind of vegetable, you can skip and use the one which you have in your fridge. Also, it is a meal in minutes. This is one such recipe.






 Ingredients:

  • 12-15 snowpeas
  • 200 gms tofu (the firm kind)
  • 1 yellow bell pepper
  • 1 broccoli
  • 1 onion
  • 1 green chili
  • 2 inch piece of ginger
  • Juice of half a lemon
  • 1-2 tsp light soy sauce
  • 1/2-1 tsp sugar
  • 1 tbsp oil
  • salt and pepper
  • Sliced ginger and spring onions for garnish.



 Recipe:

  • Chop tofu in large pieces. 

  • Make a marinade of soy sauce, grated ginger,lemon juice, sugar and chopped green chili. Coat the tofu pieces with this marinade and keep it aside for 10-15 minutes.

  • Chop onion, broccoli, yellow bell pepper. Snip the ends of the snow peas. 

  • In a pan, heat oil. Saute the onions. till they are translucent. 

  • Add the other vegetables and saute for 3-5 minutes, till they are cooked.

  • Add the marinated tofu, and gently stir-fry shaking the pan. Try not to use a spatula at this stage, or the tofu will not retain it's shape.

  • Serve hot, garnished with sliced ginger and spring onions.

Quantity:

  • 2-3 servings with rice/soup, etc

Notes:

  • You can use other vegetables like carrots, other colored bell peppers, baby corn, corn, etc.
  • Can be made with chicken, prawns, etc too, instead of tofu.

  1. Hi Sanjivni, i have been searching for a tofu recipe and this looks good...i will check it out....are snowpeas same as edamame you get in Japan?
