Mango mousse

One more quick-fix dessert, which I made ahead for my kiddo's birthday party. This was super easy and tastes so good, and takes maybe just 30-45 minutes from start to finish. (A bit more, if you are using fresh mangoes. Also, you have to set it for 2-3 hours, but if you make it a day ahead, it's just 30-45 minute work and will feed many people). 





Ingredients:

  • Whipping cream 1 cup (about 100 gms)
  • Cream cheese 2 cups (about 200 gms--I used about 210 gms of the whole 250gm pack)
  • Mango pulp (2 cups) plus 1/2 cup for topping.
  • Sugar (about 1/2-1 cup depending on how sweet you want / 50-100 gms)
  • Gelatin 1 pack
  • 3/4 cup of water( Heated for 45 seconds in the microwave)
  • Fresh mango slices or mint leaves for garnish






Recipe:

  • Chill the bowl and the cake whisk blades in the freezer for 15 minutes.
  • Pour whipped cream in the chilled bowl. Add 2 tsp of sugar and whip high for 4-5 minutes, till the cream is whipped to a stiff peak consistency.

  • Add cream cheese, mango pulp and whip on low-medium speed, till everything is blended without any lumps.


  • Heat 3/4 cup of water in the microwave and add gelatin to it. Let the gelatin dissolve (about 2/3 minutes). Add half cup of this gelatin-water to the above cream-mango mix and blend well.

  • Add half cup of mango pulp to the remaining 1/4 cup of gelatin water and mix well with a spoon. 

  • Pour the mix, about 2 tbsp per serving in pretty glasses.
  • Leave it for about 10 minutes and then top the serving glasses with the mango mix.

  • Chill all the glasses for about 2-3 hours or overnight in a refrigerator.

  • Garnish with a mango slice or mint leaf.

Quantity:

  • About 20 servings (small 2-3 tbsp per serving)

Notes:

  • You can use fresh mangoes to make a puree. I used Mango pulp in a can. Adjust sugar according to the sweetness of the mango.
  • You can add sour cream to the mix too. Half of cream cheese plus half sour cream.
  • You can pour the mango-mix over a shortcrust pastry or a cake to make a mango tart or a mango mousse cake. It makes a lovely presentation.
